hmmm... I think I'm still traumatized by my cow stomach experience in authentic hotpot joints in Chengdu.
I hope the meat is better here.
Also... I have heard some stories from my Chinese pals about hotpot places reusing oil from the spent food on the tables. It's a huge deal in china and and hurt the industry. Of course table-reuse is a big health code violation here. but who knows. It doesn't hurt to ask that they use fresh oil on your order.
